I had a very fun weekend staying in Pismo Beach with my family to celebrate my adorable nephew's 1st birthday!
I will try to recap quickly :) I woke up at 4:30 Friday morning to work out with my friend Erin at CrossFit Merced. Had a great workout to start off the weekend, then JD and the kids met us at Black Bear Diner to have a quick breakfast before we hit the road again. I had steak & eggs with a side of fresh fruit & bacon.
We arrived at my sister's house in San Luis Obispo early Friday afternoon. I heated up TJ's Tuna curry & put it over the leftover spaghetti squash concoction I made on Wednesday. It was super yummy!
I brought some Paleo snacks to eat on my road trip, these were a couple of my favorites from Trader Joe's. Sunflower seeds are another great snack for long car rides.
Dinner was at McLintocks, I told my sister I wanted a big steak so she suggested we all eat there :) It was pretty yummy, but I still think my hubby JD makes better steaks than any restaurant I've ever been to!
Saturday was party day, I ate a couple hardboiled eggs, an apple & a larabar for breakfast and then we headed to the park for the festivities. I did NOT eat anything on this table:
But the s'mores cupcakes looked pretty awesome...
I brought some nitrate free pastrami & baby carrots with me to the party so I wouldn't be tempted by all the snacks. Then afterwards I headed to downtown San Luis Obispo for some shopping with my mom, sister & "aunt" Cindy. I hit up Chipotle while they got coffee. The only meat at Chipotle that isn't cooked in soybean oil is carnitas so I had a salad with carnitas, mild salsa & guacamole. Super yummy!!
My mommy bought me some new skinny jeans and a couple of tops as an early bday present. I also scored some hand me downs from my little sister so it was a successful trip :) Dinner was at a little Italian Restaurant Del's Pizzeria. Pretty much nothing on the menu for me (as expected) but I was set because I planned ahead and made some chicken salad in the hotel room with paleo mayo, shredded carrots, raisins, sliced almonds and coconut flakes. I topped the basic garden salad with the chicken salad and it was delicious...but the picture is awful!
Sunday's bfast was a couple hardboiled eggs, some dried apricots and lots of iced black coffee. We went for a walk on the beach before heading out.
We stopped at JD's family farm on the way home, its a good halfway point and great to visit with the fam :) The kiddos were able to swim and we had a last minute potluck/bbq which turned out awesome!
Then JD's grandma told us the sweet potato farmers had just finished harvesting so we could feel free to glean whatever we wanted! Score!! We gathered a giant box full of slightly imperfect sweet potatoes, that may have actually been the highlight of my weekend :)
