I had a huge breakfast today! Southwestern Frittata, spinach sauteed with bacon & some berries, coconut flakes & sliced almonds topped with coconut milk. I couldn't quite eat it all myself so Lucas helped me out by eating most of my bacon & Peyton had some of my fruit :)
I had lettuce wrapped tacos for lunch with ground turkey seasoned with Mexican spices, black olives, cilantro, red onions, salsa & guacamole.
JD made a giant taco salad with the ground turkey instead...mostly paleo other than the cheese on top :)
Dinner was rotisserie chicken, roasted sweet potato & brussels sprouts with balsamic vinegar (I mostly followed that recipe except I just added more olive oil instead of butter).
I was feeling the need to have dessert after dinner and went to the kitchen hoping to make a PB Cup Smoothie only to realize there weren't any bananas left in the freezer :( So then I was considering making larabars but I didn't want to have to clean up mess after. Instead I just halved 3 dates and put a little almond butter & some coconut flakes on top. Not bad for a quick easy dessert :)
Tomorrow I am doing the Tough Mudder at Northstar Ski Resort. Hopefully I don't die! I'm not sure why it seemed like a good idea when I signed up back in January....12 miles up and down hills with 20 obstacles throughout....wish me luck!!
