This morning for breakfast I actually ate some of the Southwestern Frittata I made yesterday, I topped it with some salsa & had a side of avocado.
Then I made another batch of Shrimp Ceviche because I needed to use up the rest of the container of salad shrimp I bought at Costco a few days ago. I put it in the fridge to marinate while I went to the gym to do the 2nd benchmark workout. It went about as I expected, I finished the 3 rounds of 500m row, 12 body weight deadlifts & 21 box jumps (20"box) in 14:41. Now I'm even more motivated to lose some weight during this challenge because those body weight deadlifts were ROUGH (and the box jumps weren't so easy either!) After the workout I stayed for a yoga class except the instructor bailed so a few of us just did some stretching and yoga moves. I rode my bike back home and ate lunch.
Shrimp Ceviche over a bed of spinach, topped with guacamole. It was so yummy (and I was so hungry) I ate that plate and then made myself another :) I had no plans this afternoon so I made it a point to do some relaxing while the kiddos were at preschool.
The weather has been so awesome here, I can't believe its almost the end of September already!
For dinner I had some leftover Chorizo Mini Meatloaves, an artichoke boiled with garlic and olive oil and a green salad topped with Paleo Ranch Dressing & BACON!! There was a debate on the Lurong Paleo Challenge facebook page over what types of bacon were allowed & it was finally resolved that we can eat bacon with sugar in the ingredients list as long as it is nitrate free and has 0g of sugar per serving in the nutritional info. So that meant the bacon in my fridge was fair game!
