Day 2

Day 2 was a success for the most part.  I got up early to eat breakfast before my work out.  I don't know why I am so awful at frying eggs.... 
I tried again a little more carefully and got something at least semi-resembling a fried egg on top of a left over hamburger patty with a few berries and tomatoes.

My workout went pretty well.  I ended up with a time of 5:17 for my 75 snatches which was faster than all the boys and all but one other girl at my gym :)  For lunch I had a salad topped with salad shrimp I bought at costco and paleo ranch dressing.

After lunch I made some Shrimp Ceviche and left it to marinate while I went back to the gym to work out a little more :)  Here is the finished product I ate for dinner, topped with some guac!

I got a little snacky last night and had a few too many pistachios while watching TV, I need to remember its a bad idea to get out the whole costco sized bag for a snack :)   Dinner is now cooking in the crockpot for tonight and I'm off to the gym again!


  1. Your meals look so yummy! I'm so off track lately, I need to get back on it. I feel so much better when I eat right. I know you are gonna rock this challenge!

    1. You can do it Mel!! The first week is the hardest but I feel like once you get back in the groove for a week you start feeling better and remember why you liked eating this way to begin with :)

  3. You actually make it seem so easy with your presentation but I find this matter to be really something that I think I would never understand. It seems too complex and extremely broad for me. I'm looking forward for your next post, I will try to get the hang of it! bank of america online banking
