Who needs an alarm?

I woke up at 5:45 am to a flashlight shining in my eyes thanks to my lovely daughter. She insisted she was starving and we needed to go downstairs and eat immediately. So I had an early breakfast of shredded sweet potato fried in coconut oil topped with 2 fried eggs (they aren't pretty but at least they stayed in the pan this time!)

I shadowed the 9:30 am CrossFit class. I've been putting in my time so I can hopefully start teaching some classes of my own soon. I stayed for the free yoga class my gym offers every Thursday. We did head stands, fun stuff :). Then it was time for me to actually work out & get the 3rd benchmark WOD done. 5 rounds of 20 burpees & 20 kettle bell swings (35lb.). I still wasn't feeling 100% but I managed to finish in 10:48 which was faster than all but one person on the board from Tuesday (same girl who was faster on the 1st benchmark WOD!). So now I have these times to compare when we do the workouts again at the end of the challenge...I'm really curious to see if I actually have a significant improvement! Hope so!!

Lunch was a "clean out the fridge" salad topped with a can of salmon. Baby spinach, red onions, kalamata olives, sliced almonds, leftover Balsalmic Brussels Sprouts & butternut squash fries. I used some brine from the olives for a dressing.

Now we are headed down to celebrate my nephew's 1st birthday in San Luis Obispo. On the way out of town JD & the kids grabbed some Taco Bell...

I wasn't very hungry so I had a can of green beans. A few hours down the road we stopped for a potty break so I made up a random salad with what I brought in the car. Romaine lettuce, a couple hard boiled eggs, broccoli, sunflower seeds, raisins, sliced almonds, coconut flakes and a few dabs of Paleo Mayo for dressing. I was going to throw on a can of sardines or tuna but I decided to spare my family from that lovely smell in the car :).

We are breaking up the trip by staying at a friend's house in Turlock tonight...but first we are making a pit stop at Trader Joe's in Modesto, good thing I brought an ice chest!

Boo for being sick!

I woke up Monday morning not feeling so great but I tried to ignore it and pretend it was just from the weekend festivities (inhaling too much dirt!)  I got called into work at the Tot Spot because the owner wasn't feeling so great herself.  So I got the kiddos ready, packed up some food, and headed over.  Breakfast was egg salad made with Paleo Mayo, I used some celery & carrots to eat it.

For lunch I ate the last 2 Chorizo Mini Meatloaves I made last week and some ants on a log (celery with almond butter & raisins on top).

For dinner I dumped the leftover pot roast & carrots from last week into the crockpot, added some leftover vegetable broth, a carton of chicken broth, celery, onions, garlic, diced tomatoes, baby spinach, green beans & seasoned with Costco's No Salt Seasoning, Kosher Salt & pepper.  I cooked it on high for a couple hours while I took the kids to their gymnastics class.  When I got home it was all heated up and ready to eat.  I love my crockpot!

Tuesday I woke up feeling even worse & decided it was time to rest and get better.  Thank goodness it was a preschool day so I was able to stay in bed pretty much all day long.  I ate some leftover soup for lunch & dinner.

Thankfully I am feeling much better today.  I ate the last of the Southwester Fritatta topped with some avocado with a side of baby spinach sauteed in coconut oil, tomato slices & berries for breakfast.

For lunch I cooked a spaghetti squash in the microwave for 10 minutes (cut in half, removed the seeds & put face down in a pyrex with some water & covered in syran wrap ).  While the squash was in the microwave I sauteed a diced red onion in olive oil then added some crushed garlic.  When the squash was done I scraped it out with a fork into the pan and added leftover chicken breast chunks, black olives & fresh diced tomato.

Dinner was a hamburger patty topped with sliced avocado, tomatoes & red onion on a romaine lettuce bun. I steamed some broccoli & made Butternut Squash Fries.

I haven't exercised at all since Tough Mudder because I was giving myself a couple rest days after and then got sick :-X  Tomorrow I have to make up the 3rd benchmark WOD for the Lurong Paleo Challenge.  5 rounds for time of 20 Burpees & 20 kettle bell swings (35lb).  It does not sound like fun but I have to get it done and we are heading out of town tomorrow afternoon!  Wish me luck :)

Weekend Report

So I did it!  I actually made it through the 12 miles up and down hills and 20 obstacles including electric shocks, ice baths, monkey bars, a quarter pipe, tunnels half full of muddy water, crawling under barbed wire....etc.  It was a lot of fun, we had a great group of people that I couldn't have done it with out :)  I actually think I might want to do it again next year if anyone is interested let me know!  

Needless to say I wasn't completely paleo yesterday but I'm back on track today.  I'll log my cheats and move on.  I started off the day with my new favorite espresso drink with coconut water & coconut milk, plus a couple pieces of bacon.  Lunch was chicken breast cooked on a grill pan inside because it was too windy to use the bbq.  Some leftover brussels sprouts with balsamic vinegar & a green salad.

I went to a friends birthday party tonight for dinner but she was nice enough to tell all her guests to try and bring a paleo side dish for those of us doing the challenge (even though she isn't doing this challenge herself). I didn't take a picture of my plate but I had some shrimp cocktail (minus the sauce because it has sugar), prosciutto wrapped asparagus,  Purple Cabbage Slaw, green salad, fennel & onion salad, chicken & flank steak.  Lots of yummy food!  I ran away when she busted out the 3 ice cream

Day 5

I had a huge breakfast today!  Southwestern Frittata, spinach sauteed with bacon  & some berries, coconut flakes & sliced almonds topped with coconut milk.  I couldn't quite eat it all myself so Lucas helped me out by eating most of my bacon & Peyton had some of my fruit :)

I had lettuce wrapped tacos for lunch with ground turkey seasoned with Mexican spices, black olives, cilantro, red onions, salsa & guacamole.

JD made a giant taco salad with the ground turkey instead...mostly paleo other than the cheese on top :)

Dinner was rotisserie chicken, roasted sweet potato & brussels sprouts with balsamic vinegar (I mostly followed that recipe except I just added more olive oil instead of butter).

I was feeling the need to have dessert after dinner and went to the kitchen hoping to make a PB Cup Smoothie only to realize there weren't any bananas left in the freezer :(  So then I was considering making larabars but I didn't want to have to clean up mess after.  Instead I just halved 3 dates and put a little almond butter & some coconut flakes on top.  Not bad for a quick easy dessert :)

Tomorrow I am doing the Tough Mudder at Northstar Ski Resort.  Hopefully I don't die!  I'm not sure why it seemed like a good idea when I signed up back in January....12 miles up and down hills with 20 obstacles throughout....wish me luck!!

Day 4: less cooking, more eating & relaxing :)

This morning for breakfast I actually ate some of the Southwestern Frittata I made yesterday, I topped it with some salsa & had a side of avocado.

Then I made another batch of Shrimp Ceviche because I needed to use up the rest of the container of salad shrimp I bought at Costco a few days ago.  I put it in the fridge to marinate while I went to the gym to do the 2nd benchmark workout.  It went about as I expected, I finished the 3 rounds of 500m row, 12 body weight deadlifts & 21 box jumps (20"box) in 14:41.  Now I'm even more motivated to lose some weight during this challenge because those body weight deadlifts were ROUGH (and the box jumps weren't so easy either!)  After the workout I stayed for a yoga class except the instructor bailed so a few of us just did some stretching and yoga moves.  I rode my bike back home and ate lunch.

Shrimp Ceviche over a bed of spinach, topped with guacamole.  It was so yummy (and I was so hungry) I ate that plate and then made myself another :)  I had no plans this afternoon so I made it a point to do some relaxing while the kiddos were at preschool.

The weather has been so awesome here, I can't believe its almost the end of September already!

For dinner I had some leftover Chorizo Mini Meatloaves, an artichoke boiled with garlic and olive oil and a green salad topped with Paleo Ranch Dressing & BACON!!  There was a debate on the Lurong Paleo Challenge facebook page over what types of bacon were allowed & it was finally resolved that we can eat bacon with sugar in the ingredients list as long as it is nitrate free and has 0g of sugar per serving in the nutritional info.  So that meant the bacon in my fridge was fair game!

Hump Day & Cooking Day :)

I started off the day with a homemade chai tea latte.  I made a cup of organic chai tea from a tea bag & then added a shot of espresso, some cinnamon, nutmeg and a splash of coconut milk.  Yum!  I worked out at 9:30 am so I waited until after that to eat.  I made a bunch of Chorizo Mini Meatloaves except I added a cup of shredded sweet potato to the onion and garlic and sauteed it for 5-8 minutes before adding it to the meat mixture.  I ate a few of those and some steamed broccoli for lunch.

First thing this morning I prepped dinner and threw it in the crockpot so it cooked for almost 10 hours before we ate it tonight :)  I took a chuck roast and rubbed it with salt, pepper, onion powder & garlic powder then seared it on all sides in coconut oil.  I sliced an onion, some celery & dumped those in the bottom of the crockpot along with a bag of baby carrots.  I seasoned those with the same spices I put on the meat.  Then I put the meat on top of the veggies & added some vegetable stock & red wine to the crockpot.  Put the lid on and let it go on low all day.  My house smelled amazing :)  It tasted pretty good too!

I also took some free time I had while the kids were at preschool to make up a Southwestern Frittata that I can reheat for breakfast the next few days :)  I actually cooked up a bunch of ground turkey with mexican seasonings and then used half for the frittata and saved half to make a taco salad or lettuce wrapped tacos later in the week.  My fridge is so stocked full of prepped food and leftovers I am going to have a hard time deciding what to eat the next few days! 

Tomorrow I'm doing the 2nd Benchmark workout for the challenge.  It consists of 3 rounds of a 500 meter Row, 12 Bodyweight Deadlifts, 21 Box Jumps at 20”.  Its not going to be easy because box jumps are not my favorite thing and I weigh a lot so the deadlifts will be pretty tough!  Hopefully when we do it again at the end of the challenge the deadlifts will be lighter and the workout will be easier :)

Day 2

Day 2 was a success for the most part.  I got up early to eat breakfast before my work out.  I don't know why I am so awful at frying eggs.... 
I tried again a little more carefully and got something at least semi-resembling a fried egg on top of a left over hamburger patty with a few berries and tomatoes.

My workout went pretty well.  I ended up with a time of 5:17 for my 75 snatches which was faster than all the boys and all but one other girl at my gym :)  For lunch I had a salad topped with salad shrimp I bought at costco and paleo ranch dressing.

After lunch I made some Shrimp Ceviche and left it to marinate while I went back to the gym to work out a little more :)  Here is the finished product I ate for dinner, topped with some guac!

I got a little snacky last night and had a few too many pistachios while watching TV, I need to remember its a bad idea to get out the whole costco sized bag for a snack :)   Dinner is now cooking in the crockpot for tonight and I'm off to the gym again!

9 Week Paleo Challenge Starts Today!

So I started a Paleo challenge with a group at South Tahoe Crossfit and also 6,500 other people nationwide.  Here is a little more info:  I have done a few shorter challenges based solely on nutrition but this one is a little different incorporating benchmark work outs along with pictures and body measurements to track progress over the 9 weeks.  Instead of spamming my facebook with pictures of food I decided to track my meals here so that interested parties can check it out at their leisure :)  So here goes...

I woke up pretty bloated and not at all hungry thanks to pre-challenge ice cream & chips before bed last night.  So breakfast consisted of iced coffee and a couple strawberries.  I packed up the kiddos and headed to Carson City this morning to hit up Trader Joe's and Costco.  I realized it was after 1pm and I hadn't really eaten anything yet so I went through the McDonald's drive-thru on the way home to get a side salad and topped it with a can of sardines.


Sorry if that is not at all appetizing to some of you, but its really not bad and a super easy meal when you are in a rush.  I buy sardines packed in olive oil at Costco & always keep them around for a snack or meal addition in a pinch :)

Dinner was a little more traditional:

I cooked a whole chicken in a rotisserie machine (thanks Dad!), steamed some broccoli and threw together a salad topped with Paleo Ranch Dressing.  And that is all I will be eating today, drinking some water and heading to bed.  Tomorrow I will be doing the first of three benchmark workouts.  It is called "Randy" and consists of 75 Power Snatches for time (55lbs).  Wish me luck :)
